Cheesy Asparagus Delight (Print Version)

01 - 2 lb asparagus, ends trimmed, cut into 2-inch lengths
02 - 1/2 cup mayo
03 - 6 oz grated sharp cheddar
04 - 1/2 diced onion
05 - 2 tbsp all-purpose flour
06 - 2 minced garlic cloves
07 - 1 cup whole milk
08 - Season with a pinch of salt
09 - Freshly cracked pepper, to taste
10 - 15 crushed Ritz crackers

# Instructions:

01 - Toss the asparagus, mayo, and cheddar cheese in a big mixing bowl.
02 - Heat some oil in a large pan over medium. Toss in the chopped onion and cook about 5 minutes until softened and golden. Stir in the garlic, then add the flour. Mix everything well and let it cook for another minute or so.
03 - Pour the milk in little by little while stirring until it all comes together into a smooth sauce. Bring it to a slight bubble and let it thicken for a bit. Add a little salt and pepper.
04 - Add the milk sauce to the bowl with asparagus, mayo, and cheese. Blend it all together until well mixed.
05 - Spread the mixture evenly into a 9x13 dish. Scatter the crushed Ritz crackers on top. Bake in a 375°F (190°C) oven for 40–50 minutes until bubbly and golden. If you'd like a crispy top, broil for 1 minute at the end.
06 - Allow a few minutes for cooling before digging in. Enjoy piping hot!

01 - You can prep this ahead of time and keep it in the fridge. Bake within 3 days.
02 - For a gluten-free take, replace flour with 2 tsp cornstarch and swap crackers with crushed chips.
