Toss the asparagus, mayo, and cheddar cheese in a big mixing bowl.

Heat some oil in a large pan over medium. Toss in the chopped onion and cook about 5 minutes until softened and golden. Stir in the garlic, then add the flour. Mix everything well and let it cook for another minute or so.

Pour the milk in little by little while stirring until it all comes together into a smooth sauce. Bring it to a slight bubble and let it thicken for a bit. Add a little salt and pepper.

Add the milk sauce to the bowl with asparagus, mayo, and cheese. Blend it all together until well mixed.

Spread the mixture evenly into a 9x13 dish. Scatter the crushed Ritz crackers on top. Bake in a 375°F (190°C) oven for 40–50 minutes until bubbly and golden. If you'd like a crispy top, broil for 1 minute at the end.
