Start by warming the sesame oil in a big skillet or wok over medium-high heat.

Toss in the garlic, thawed peas and carrots, and diced onion. Cook them while stirring until soft.

Turn the heat down to medium-low, move the veggies to one side, and pour beaten eggs on the empty side. Scramble until firm.

Add the white rice and soy sauce into the skillet. Combine everything well and stir-fry until the mixture is heated through.

Take it off the stove once it's all mixed and warm. Serve immediately while hot.
