Spring Goat Cheese Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 5 ounces spring mix greens
02 - 1 cup blueberries, rinsed
03 - 1/2 cup roughly chopped walnuts (toast them if you'd like)
04 - 1/2 cup goat cheese, broken into small chunks

→ Blueberry Dressing

05 - 1/4 cup olive oil
06 - 1 tablespoon apple cider vinegar
07 - 3 tablespoons fresh blueberries
08 - 1 tablespoon monk fruit sweetener (or whatever powder sweetener you like)
09 - 1/4 teaspoon sea salt
10 - 1/8 teaspoon black pepper, ground

# Instructions:

01 - Throw the olive oil, apple cider vinegar, 3 tablespoons blueberries, your powder sweetener, salt, and pepper into a blender. Whizz until it's smooth and everything's mixed well. Give it a taste and add more sweetener if you want.
02 - Take a big bowl and toss in your spring mix, blueberries, walnuts, and goat cheese. Mix everything around gently so you don't squish the greens.
03 - Drizzle your blueberry dressing all over the salad and give it a light toss to coat everything. Eat it right away for the best taste.

01 - You can make the dressing a day early and keep it in the fridge in a tight container.
