Chicken Broccoli Stir (Print Version)

# Ingredients:

→ Stir Fry Mix

01 - 2 large heads of broccoli, broken into florets
02 - 2 tablespoons of cooking oil
03 - 1 pound of chicken thighs, cut into strips
04 - 1 inch of fresh ginger, finely grated
05 - 2 garlic cloves, finely chopped
06 - Serve with pre-cooked rice

→ Sauce Ingredients

07 - 1/3 cup soy sauce
08 - 1/2 cup chicken stock
09 - 1 tablespoon of cornflour
10 - 2 tablespoons of soft brown sugar
11 - 1 teaspoon of toasted sesame oil

# Instructions:

01 - Stir together chicken stock, soy sauce, sesame oil, brown sugar, and cornflour in a mixing bowl. Keep mixing until smooth with no lumps.
02 - Drop the broccoli into boiling water for 2 minutes. Once the color pops, move it to a bowl of cold water to cool. Let it drain thoroughly afterward.
03 - Crank up the heat on a wok or large pan. Pour in the oil. Toss in the chicken strips and cook them for 5 to 6 minutes, stirring the whole time, until they’re golden and fully done.
04 - Toss in the garlic and ginger with the cooked chicken. Keep stirring for about 30 seconds until you can smell the aroma.
05 - Add the prepared broccoli into the hot wok. Pour the sauce over everything, stirring constantly. Let it cook until the sauce thickens, which should take 2-3 minutes.
06 - Spoon the stir fry onto plates over fresh warm rice. Serve straight away for the best experience.

01 - Keep the heat high while cooking to get the best stir-fry texture.
02 - Don’t overcrowd the pan or you’ll lose those lovely browned edges on your chicken.
03 - For juicier chicken, slice it thinly against the grain.
