Get your oven hot at 180°C (350°F). If you've got a regular non-fan electric oven, bump it up to 200°C (390°F).

Pour and smooth out 1 tablespoon honey on each puff pastry sheet.

Scatter walnuts, blue cheese bits, and Parmesan evenly across both sheets. Top with thyme leaves and a bit of salt and pepper.

Roll each sheet up tightly. Slice down the middle lengthwise and push back any filling that tries to escape.

Take each pastry strip and twist it gently, then curl it into a round shape on baking paper.

Lightly brush milk over the coiled pastry to get a nice golden color when baked.

Stick them in the hot oven for 25-30 minutes until they puff up and turn golden brown all through.

Take them out, sprinkle with some fresh thyme, and serve while they're still warm.
