Cheese Nut Thyme Twists (Print Version)

# Ingredients:

→ Pastry Base

01 - 2 squares of puff pastry sheets
02 - 2 tablespoons honey
03 - 1 tablespoon milk (for brushing)

→ Filling

04 - 100g crumbled blue cheese
05 - 100g grated Parmesan cheese
06 - 50g chopped walnuts
07 - 6-8 fresh thyme sprigs with leaves removed, keep some extra for garnish
08 - Black pepper and sea salt as needed

# Instructions:

01 - Get your oven hot at 180°C (350°F). If you've got a regular non-fan electric oven, bump it up to 200°C (390°F).
02 - Pour and smooth out 1 tablespoon honey on each puff pastry sheet.
03 - Scatter walnuts, blue cheese bits, and Parmesan evenly across both sheets. Top with thyme leaves and a bit of salt and pepper.
04 - Roll each sheet up tightly. Slice down the middle lengthwise and push back any filling that tries to escape.
05 - Take each pastry strip and twist it gently, then curl it into a round shape on baking paper.
06 - Lightly brush milk over the coiled pastry to get a nice golden color when baked.
07 - Stick them in the hot oven for 25-30 minutes until they puff up and turn golden brown all through.
08 - Take them out, sprinkle with some fresh thyme, and serve while they're still warm.

# Notes:

01 - You can make these tasty swirls ahead of time and keep them in the fridge until you're ready to bake.
02 - Always work with cold pastry for the best outcome.
