Effortless Cottage Cheese Queso (Print Version)

# Ingredients:

→ Cheesy Base

01 - 2 teaspoons taco seasoning blend
02 - 16 ounces creamy cottage cheese (Good Culture is a great pick!)
03 - 1/4 cup plain water
04 - 1 cup cheddar shredded fresh from the block

05 - A sprinkle of fresh cilantro
06 - Pico de gallo for a fresh kick

# Instructions:

01 - Dump the cottage cheese, taco flavoring, and water into a blender, then blitz it till it's completely smooth. Should take around 30 seconds.
02 - Move the creamy blend to a saucepan on medium-low. Slowly mix in the cheddar while stirring, and keep at it until all the cheese melts together nicely.
03 - Check how it tastes and sprinkle in salt or pepper if needed. Scoop it up into a bowl, scatter some cilantro or pico de gallo if you'd like, and dig in while it's still warm!

01 - To make it extra creamy, keep blending the cottage cheese until it's lump-free. If you still see chunks, blend a little longer!
