Set your oven to 190°C and coat a muffin tin or small loaf pan with oil or non-stick spray.

Stir together the chicken, Parmesan, breadcrumbs, garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper in a big bowl until everything’s combined.

Scoop the mix into your prepared pans, pressing lightly to shape each portion evenly.

Pop them in the oven for about 20 to 25 minutes. They’re ready when they’re golden and fully cooked.

Take them out, spoon over a little marinara, and top off with some mozzarella.

Put back into the oven for 5 more minutes, just enough to melt and bubble the cheese.

Enjoy warm! Sprinkle extra parsley on top before serving, if you’d like.
