Get your oven going at 375°F (190°C). Grab a medium bowl and whisk together the eggs and milk until smooth. Toss in some salt, pepper, and garlic powder (go for it if you'd like) to season. Mix in the shredded chicken, bell peppers, spinach, onions, and half of the grated cheese. Stir it up until blended.

Get your skillet nice and warm over medium heat with the olive oil. Once it's heated, pour in the egg mix. Let it cook for about 3-4 minutes. Stir gently a few times so the edges don't overcook.

Top the frittata with the leftover cheese, then move the skillet into your preheated oven. Bake for around 12-15 minutes, just until the center is firm and golden on top. Pull it out, let it sit a few minutes, then slice and enjoy.
