Put yogurt, nut butter, maple syrup, protein powder if using, sea salt, and vanilla in a big bowl. Stir until it's all mixed up and smooth. Give it a taste and add more sweetness if you want.

Spoon your mixture into molds, leaving about a third empty at the top of each space.

Toss chocolate and coconut oil together in a small bowl. Melt it slowly using a double-boiler setup or pop it in the microwave for 30 seconds at a time, making sure to stir between zaps until it's all runny.

Drizzle melted chocolate on top of each yogurt-filled section until you've used up the remaining space in each mold.

Stick them in the freezer for 3-4 hours, then pop them out. Let them sit for a minute or two before eating so they're creamier.
