Cut the dates open lengthwise and take out the pits. Add ½ teaspoon of pistachio butter inside each one.

Warm up the chocolate using a double boiler or in short bursts in your microwave until it's smooth and runny.

Grab each filled date with tongs and dunk it in the melted chocolate, then lay it on a board lined with parchment.

Scatter crushed pistachios over your chocolate-dipped dates. Stick them in the fridge for about 20 minutes so the chocolate hardens.
