Apple Chia Bowl (Print Version)

# Ingredients:

→ Pudding Mix

01 - ½ cup seeds from chia
02 - 2 cups plant milk
03 - 4 tablespoons mashed apple
04 - 1 ½ tablespoons pure maple syrup
05 - 1 ¼ teaspoon apple pie seasoning blend
06 - ¼ cup plant-based thick yogurt

→ Sweet Apple Topping

07 - 1 large crisp apple
08 - 2 teaspoons coconut fat
09 - 1 tablespoon tree syrup
10 - 1 teaspoon cinnamon powder

# Instructions:

01 - Throw together the chia, plant milk, mashed apple, syrup, spice mix, and plant yogurt in a big bowl. Stir it all up till everything's mixed really well.
02 - Put a lid on it and stick it in the fridge overnight. Can't wait that long? Give it at least an hour so it gets thick and the seeds soak up all the liquid.
03 - Take out the middle of your apple and chop it into tiny cubes so they'll cook evenly.
04 - Toss your diced apple in a pan with the coconut fat, syrup, and cinnamon over medium heat. Cook for about 5 minutes till they get soft and turn a nice golden brown.
05 - Scoop your thick pudding into bowls. Drop the warm apples on top, sprinkle with a bit more cinnamon if you want, and maybe add an extra drip of syrup.

# Notes:

01 - For the best results, give the pudding a quick stir once or twice while it sits to break up any lumps.
02 - You can make this ahead and keep it in your fridge for up to 4 days.
