Hold each peach steady and cut it in half from top to bottom. Twist the two halves apart gently, and use a knife or spoon to remove the pit. Perfect halves aren't a must—they'll still turn out great!

Heat up the butter in a pan over medium. When it starts bubbling a bit, stir in brown sugar, cinnamon, ginger, and that little salt pinch. Keep stirring until the mix turns into a thick amber sauce.

Lay the peach halves, cut side down, in the pan. Let them sit and sizzle for 5-7 minutes without much moving so they caramelize. Peek under one after a few minutes to check for a rich golden color.

Once the cut sides are golden and browned, carefully use a spatula or tongs to flip them over—they'll be soft, so work gently! Let the other side cook for another couple of minutes, spooning some sauce over them as they cook.
