Effortless Tea Loaf (Print Version)

# Ingredients:

01 - 113 g coconut or unrefined cane sugar
02 - 250 ml strongly brewed green or black tea
03 - 1 TBSP apricot jam or marmalade
04 - 2 tsp baking powder
05 - 1 tsp mixed spice or ground cinnamon
06 - 3 TBSP water
07 - 227 g wholemeal (or chapatti) flour
08 - 225 g dried mixed fruit (sultanas, raisins, goji, candied citrus peel)

# Instructions:

01 - Let the dried fruits sit in the brewed tea for at least 4-5 hours, or overnight if you can.
02 - Use a little grease on a 2lb loaf pan. Add non-stick baking paper or a liner to the bottom.
03 - Set your oven to 160°C (325°F), no matter if it's a fan or standard version.
04 - Take the soaked fruits (including leftover tea) and put them in a bowl. Add in sugar, jam, flour, spices, baking powder, and the water. Stir everything together until smooth.
05 - Spoon the mixture into your loaf pan and smooth out the top.
06 - Pop the pan in the oven and bake for about 1 hour and 15 minutes. Check it's done by sticking a skewer in the center—it should come out clean.
07 - Leave the loaf in the pan for about 30 minutes. Then, move it to a cooling rack until fully cooled.
08 - Keep it chilled in the fridge in an airtight container for up to five days. For longer storage, freeze it.
