Let the dried fruits sit in the brewed tea for at least 4-5 hours, or overnight if you can.

Use a little grease on a 2lb loaf pan. Add non-stick baking paper or a liner to the bottom.

Set your oven to 160°C (325°F), no matter if it's a fan or standard version.

Take the soaked fruits (including leftover tea) and put them in a bowl. Add in sugar, jam, flour, spices, baking powder, and the water. Stir everything together until smooth.

Spoon the mixture into your loaf pan and smooth out the top.

Pop the pan in the oven and bake for about 1 hour and 15 minutes. Check it's done by sticking a skewer in the center—it should come out clean.

Leave the loaf in the pan for about 30 minutes. Then, move it to a cooling rack until fully cooled.

Keep it chilled in the fridge in an airtight container for up to five days. For longer storage, freeze it.
