Pour the water into a pan and mix in butter, sugar, and salt. Get the mixture boiling over high heat. When you see it bubbling, lower the heat and steadily stir in the flour bit by bit until the dough forms into a smooth ball. Once combined, remove it from the heat completely.

Scoop the dough into a big mixing bowl and leave it to cool for 4-5 minutes. When it’s warm but not hot, beat in the egg and vanilla extract. Use a handheld mixer to blend everything together until the dough is soft and smooth.

Spoon the dough into a piping bag. Set your air fryer to 190°C and let it heat up. Lightly spray the basket with nonstick cooking spray (a neutral one works best). Pipe small churros directly into the basket, spacing them out. If piping isn’t your thing, just drop spoonfuls of dough instead.

Brush a thin layer of butter over the churros, then cook them in the preheated air fryer for 10-12 minutes. Stop when they’re beautifully golden and crispy. If your air fryer is small, you’ll want to cook them in several rounds to avoid crowding.

Mix sugar and cinnamon together in a shallow dish. Right after the churros come out of the fryer, toss them gently in this cinnamon sugar. To make it stick better, you can spray or brush the churros with melted butter or water before rolling them in the mixture.
