Sausage Rice Skillet (Print Version)

# Ingredients:

01 - 1/4 tsp cayenne pepper
02 - 1 1/2 tbsp chopped fresh parsley for topping
03 - 1/2 tsp sea salt, kosher
04 - 4 minced garlic cloves
05 - 1 small quartered white onion, sliced
06 - 1/2 yellow bell pepper, sliced lengthwise
07 - 1/2 red bell pepper, thinly sliced
08 - 12 oz smoked sausage, cut into pieces
09 - 2 tsp olive oil
10 - 1 tsp paprika spice
11 - 1 1/4 cup uncooked white rice
12 - 1/2 tsp ground black pepper
13 - 1/4 cup + 1 cup low-sodium chicken broth
14 - 5 tbsp tomato paste mix

# Instructions:

01 - Follow the directions on the rice package to prepare it in a small pot. Put it aside when it's done.
02 - Warm up a big cast iron skillet at medium-high heat. Pour in the olive oil and let it heat up a bit. Toss in the sausage slices and let them brown on both sides, roughly 5 minutes. Take them out and set them aside.
03 - Using the same skillet, toss in the onion and bell peppers. Stir them around for 4-5 minutes until they start to soften. Add garlic, salt, and black pepper, cooking for another minute until the smell gets nice. Then take everything out of the pan and set it aside with the sausage.
04 - Turn the heat down to medium. Add tomato paste and 3/4 cup chicken broth to the skillet. Use a whisk to get it smooth, then let it bubble for about a minute. Stir in cayenne and paprika for that kick of flavor.
05 - Dump the rice, veggies, sausage, the rest of the chicken broth, and the sauce back into the skillet. Stir until it's nice and combined.
06 - Sprinkle the parsley on top and dig in while it's still warm!

# Notes:

01 - Crank up the heat by adding more cayenne or sprinkling in some red pepper flakes.
02 - Try switching up the sausage—turkey, andouille, or chorizo are awesome options.
03 - Want it cheesy? Mix in some shredded Parmesan or cheddar right before serving.
04 - Toss in extra veggies like mushrooms, zucchini, or spinach for more flavor.
