Egg Avo Toast (Print Version)

# Ingredients:

→ Base Layer

01 - 2 bread slices
02 - ½ soft avocado

→ Protein Component

03 - 2 fresh eggs

→ Garnishes

04 - 2 tsp basil sauce
05 - Salt and pepper, as needed

# Instructions:

01 - Fill a big pot with water and heat until bubbling over medium-high flame. Slowly drop each egg into the water using a holed spoon. Let them simmer for 7 minutes, keeping the water at a light bubble.
02 - While eggs bubble away, pop bread in the toaster. After it's crispy, smash about ¼ avocado onto each slice. You'll find mashing helps it spread better.
03 - Move eggs to cold water with some ice cubes and let them sit for about 2 minutes. Take off the shells and cut each egg into four pieces.
04 - Set egg chunks on your avocado toast, one egg for each slice. Shake some salt and pepper on top. Finish with a drizzle of basil sauce.

# Notes:

01 - Getting that runny yolk means watching your heat level and timing things just right.
02 - Go for avocados that give slightly when pressed but aren't mushy for easy spreading.
