Grilled Asparagus Feta (Print Version)

# Ingredients:

→ Essentials

01 - 1/4 teaspoon of black pepper, freshly ground
02 - 1/4 teaspoon fine sea salt
03 - 1/2 cup feta, crumbled small
04 - 2 tablespoons of fresh lemon juice
05 - 2 tablespoons olive oil
06 - 1 bunch of asparagus, cut off the tough ends

# Instructions:

01 - In a dish, combine the asparagus spears with the olive oil, salt, and pepper until they're well-coated.
02 - Set the asparagus on the grill so they're lying across the grates. Cook them on medium-high heat for about 3 to 4 minutes, turning once for thicker stalks. They'll get that smoky look but stay crisp. If you'd rather, pop them in a grilling or fish basket to make things easier.
03 - Once you've grilled the asparagus, chop them into small pieces and pop them back in the dish. Toss them with any leftover oil mix, then sprinkle on the lemon juice and feta. Give it a quick taste and add more salt or pepper if you think it needs it. Let it cool a bit and serve warm or room temperature.

# Notes:

01 - For the freshest taste, keep the asparagus in water in the fridge for a day or two before using.
02 - This dish is delicious when you serve it warm, right after cooking.
