Spinach Feta Bites (Print Version)

# Ingredients:

01 - 2 cups chopped fresh spinach (or thawed and squeezed frozen spinach)
02 - 1 cup broken up feta cheese
03 - 1 small onion, diced finely
04 - 2 cloves garlic, crushed
05 - 1 egg
06 - 1/2 cup breadcrumbs (go for gluten-free ones if you need to)
07 - 1/4 cup shredded Parmesan cheese (just for extra taste, skip if you want)
08 - 1/4 tsp oregano, dried
09 - Pepper and salt as needed
10 - 2 tbsp olive oil (one for greasing pan, one for coating tops)

# Instructions:

01 - Get your oven hot at 375°F (190°C). Put parchment on a baking tray or just rub it with some olive oil.
02 - Dump all your spinach, feta, onion, garlic, egg, breadcrumbs, Parmesan (if you're using it), oregano, pepper and salt in a big bowl. Stir it all together until it sticks well.
03 - Grab bits of the mix and shape them into small round or oval cakes about 2-3 inches wide. Set them on your ready baking tray.
04 - Dab the tops with olive oil so they'll turn nice and brown with a bit of crunch when they bake.
05 - Stick them in the oven for 20-25 minutes until they look golden and crispy outside. Turn them over halfway so both sides cook evenly.
06 - Pull them out and let them sit a bit before eating. They're best warm with tzatziki or any dip you like.

# Notes:

01 - You can make these cakes two days early and keep them in the fridge before cooking.
02 - Want them gluten-free? Just make sure you're using proper gluten-free breadcrumbs.
