Get your oven hot at 375°F (190°C). Put parchment on a baking tray or just rub it with some olive oil.

Dump all your spinach, feta, onion, garlic, egg, breadcrumbs, Parmesan (if you're using it), oregano, pepper and salt in a big bowl. Stir it all together until it sticks well.

Grab bits of the mix and shape them into small round or oval cakes about 2-3 inches wide. Set them on your ready baking tray.

Dab the tops with olive oil so they'll turn nice and brown with a bit of crunch when they bake.

Stick them in the oven for 20-25 minutes until they look golden and crispy outside. Turn them over halfway so both sides cook evenly.

Pull them out and let them sit a bit before eating. They're best warm with tzatziki or any dip you like.
