Jamaican Beef Patties (Print Version)

# Ingredients:

→ For the Dough

01 - ½ cup water, chilled
02 - 1 teaspoon turmeric powder
03 - 1 teaspoon salt
04 - ½ cup shortening, cold and diced
05 - ½ cup unsalted butter, cold and cubed
06 - 2 ½ cups plain flour

→ For the Filling

07 - 1 tablespoon curry powder
08 - ½ cup beef stock
09 - 1 tbsp soy sauce
10 - ½ tsp cayenne pepper (optional)
11 - ½ cup breadcrumbs
12 - ½ tsp ground black pepper
13 - 1 lb minced beef
14 - 1 small onion, chopped small
15 - 1 tsp dried thyme
16 - 1 tsp allspice powder
17 - 2 garlic cloves, finely minced
18 - 1 tsp salt
19 - 1 egg for brushing

# Instructions:

01 - Put flour, turmeric, and salt into a bowl. Drop in cubed butter and shortening, then work them into the flour using your hands until the mix looks crumbly. Slowly pour in the chilled water, kneading until it comes together as a smooth dough. Wrap up in cling film and cool in the fridge for half an hour.
02 - Heat up a pan and cook the ground beef until browned. Toss in onion, garlic, thyme, allspice, black pepper, cayenne, and salt. Stir in soy sauce, curry powder, and beef stock. Let it simmer for 10 minutes, then mix in breadcrumbs and cook until the filling thickens. Set it aside to cool completely.
03 - Set your oven to 190°C (375°F) to preheat. Roll out the dough and cut it into 6-inch-wide circles. Take 2 spoonfuls of the filling, place it on one half, and fold the dough over the filling. Press down the edges with a fork and brush the tops with the egg wash.
04 - Lay the patties out on a tray lined with baking paper. Pop them in the oven and bake for 20 to 25 minutes. Keep an eye on them until the pastries turn golden and crisp.

# Notes:

01 - For a true Jamaican touch, don't let the filling get too runny. If it's too wet, the dough will end up soggy.
