Set your oven to 425°F (220°C), and lightly coat a baking pan using cooking spray.

Lay the halibut fillets on a plate, drizzle olive oil on them, and squeeze half the lemon over the top. Sprinkle with some salt and pepper to your taste.

Combine the panko, parmesan, dried herbs, zest of the lemon, and garlic powder in a small mixing bowl.

Press the crumb mixture down gently onto the top side of the fillets so it sticks well.

Pop the fish into the oven and bake for about 10–15 minutes, or until it easily flakes with a fork and looks opaque. Pair with the remaining lemon for an extra kick of flavor.
