# Ingredients:

01 - 1 red onion, cut in chunks
02 - 2 tablespoons of olive oil
03 - 3 bell peppers, cut into chunks
04 - Salt and pepper to taste
05 - 1 fresh pineapple, chopped up
06 - 2 pounds of chicken thighs

07 - 2 tablespoons of minced ginger
08 - 4 minced garlic cloves
09 - 1/2 cup soy sauce
10 - A sprinkle of red pepper flakes (optional)
11 - 1 tablespoon sesame oil
12 - 1/4 cup honey

→ Extras for Serving

13 - Extra sauce for drizzling
14 - Fresh green onions for garnish
15 - Cooked rice of your choice
16 - Sesame seeds for topping

# Instructions:

01 - Combine the soy sauce, honey, sesame oil, ginger, garlic, and some red pepper flakes if you want a bit of heat.
02 - Dry the chicken pieces with paper towels, then let them soak in the sauce for about half an hour.
03 - Cut the pineapple, onions, and bell peppers into edible chunks.
04 - Spread out the chicken, veggies, and pineapple on a tray, ensuring there's a little space between pieces.
05 - Roast everything in a hot oven until the chicken is fully cooked.
06 - Turn on the broiler for a couple of minutes to get a browned surface.
07 - Serve the chicken and veggies over rice, then sprinkle on green onions, sesame seeds, and extra sauce to your liking.
