Honey Garlic Carrots (Print Version)

# Ingredients:

→ Roasted Carrots

01 - 2 pounds of rainbow carrots, sliced and peeled
02 - 1 tablespoon of olive oil
03 - A pinch of garlic powder
04 - A pinch of onion powder
05 - 1/4 teaspoon smoked paprika
06 - 1/4 teaspoon cumin
07 - 1/4 teaspoon black pepper
08 - 1/2 teaspoon salt

→ Yogurt Sauce

09 - 1/2 cup of Greek yogurt (whole milk)
10 - 1/2 clove of garlic, finely chopped
11 - 1/2 tablespoon of olive oil
12 - Salt and pepper to your liking

→ Garnish

13 - A handful of pistachios, loosely chopped
14 - Fresh cilantro, roughly cut (1/4 cup)
15 - Drizzle of honey

# Instructions:

01 - Set your oven to 450°F (230°C). Spread the carrot slices on a baking tray. Pour olive oil over them. Combine onion powder, garlic powder, cumin, paprika, salt, and pepper in another bowl. Sprinkle this seasoning mix onto the carrots. Gently toss so all the slices get coated. Roast for about 20 minutes until they’re soft and slightly browned.
02 - Grab a small bowl and mix the yogurt, olive oil, minced garlic, and your preferred amount of salt and pepper. Stir until it’s all blended smoothly.
03 - Move the roasted carrots to your serving plate or bowl. Add dollops of the yogurt sauce on top. Drizzle a little honey and sprinkle some chopped cilantro and pistachios over everything before serving.

# Notes:

01 - Choose carrots that are similar in size to make sure they cook evenly.
02 - Whip up the yogurt sauce while the carrots are roasting to save yourself some time.
