Lime Avocado Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 2 garlic cloves, finely chopped
02 - 1 teaspoon finely grated lime peel
03 - 1/4 cup natural honey
04 - A dash of salt
05 - Pepper, as much as you like
06 - 1 lb of chicken breasts, without skin or bones
07 - Juice from 2 tablespoons of lime

→ Rice

08 - 1/4 cup freshly chopped cilantro
09 - A little bit of salt
10 - Juice from 1 lime, about a tablespoon
11 - 1 cup of warm white or brown rice, already cooked

→ Avocado Layer

12 - Lime juice, a tablespoon's worth
13 - A couple of ripe avocados, sliced
14 - Season with salt
15 - Add some pepper

# Instructions:

01 - Mix together the honey, lime zest, lime juice, garlic, salt, and pepper in a bowl. Coat the chicken with this and let it sit and soak up flavors for no less than 15 minutes.
02 - Using a pan or a grill on medium-high heat, cook the chicken for around 6-7 minutes per side. Make sure it's cooked all the way through, with no pink in the center. Take it off the heat and give it a quick rest, then slice it up.
03 - Stir your cooked rice, cilantro, lime juice, and a pinch of salt in a bowl until everything’s combined.
04 - Put the avocado slices in another bowl. Drizzle over the lime juice, sprinkle some salt and grind a bit of pepper on top. This’ll help keep them looking fresh.
05 - Grab a plate and start layering. First the rice, then some of the chicken slices, followed by the avocado. If there’s extra dressing left, pour it on top.
