Brown the breakfast sausage completely in a cast iron pan until crispy on edges. Set the meat aside and keep ¼ cup of the fat drippings for later.

Put flour into the saved fat and cook on medium until it turns light brown. Slowly pour in milk while constantly stirring to keep it smooth, until you get thick, creamy gravy. Add salt and pepper how you like it.

Gently toast English muffin pieces until they're just a bit golden on the edges.

Using another pan, cook the eggs with a little milk until they're soft but not runny. Take them off the heat right away.

Put all the toasted muffin pieces on a cookie sheet. Cover each with some gravy, then pile on scrambled eggs, broken-up sausage bits, and plenty of shredded cheddar.

Stick the cookie sheet under a hot broiler for about 2-3 minutes, until the cheese melts completely and gets some golden bubbles. Keep an eye on it so nothing burns.
