Start by preheating your oven to 300ºF. Mix sugar and flour together in a large bowl. Toss in the softened butter and use an electric mixer on medium to combine everything until smooth. Place the dough in a 13×9 inch pan and press it down tightly to make an even base.

Pop the crust in the oven and bake for 30–35 minutes, until the edges are a light golden color. Pull it out of the oven and let it cool completely before moving on.

In a big bowl, beat together powdered sugar and cream cheese until smooth using an electric mixer on medium speed. Add the pudding mix and milk, and keep mixing until it’s nice and creamy with no lumps.

Spread the pudding mixture smoothly over the cooled crust. Toss the chopped pistachios on top to finish. Chill it in the fridge for at least an hour or until it firms up.
