Vibrant Salmon Dish (Print Version)

# Ingredients:

01 - 2 tbsp fresh lemon juice
02 - 4 salmon fillets (each about 6 oz)
03 - ½ cup Kalamata olives, halved and pitted
04 - ½ tsp salt
05 - 2 tbsp extra virgin olive oil (use more for drizzling as needed)
06 - 1 tsp dried oregano
07 - ½ small red onion, finely sliced
08 - 1 ½ cups cherry tomatoes, sliced in half
09 - 2 tbsp fresh basil, finely chopped

# Instructions:

01 - Grease your baking dish with olive oil, and set your oven to 400°F (200°C) to preheat.
02 - Mix the cherry tomatoes, Kalamata olives, sliced onions, olive oil, lemon juice, oregano, and salt in a bowl. Make sure everything's coated evenly.
03 - Lay the salmon fillets down in the greased dish, keeping the skin side underneath. Scatter the veggie mixture all around the salmon. Drizzle more olive oil over the top.
04 - Pop the baking dish into the oven for 15-20 minutes. It's ready when you can easily flake the salmon with a fork.
05 - Toss some chopped basil over everything just before serving.
