Ham and Cheese Scones (Print Version)

# Ingredients:

01 - 1/3 cup packed light brown sugar
02 - 115g diced ham
03 - 115g shredded cheddar cheese
04 - 1/4 teaspoon ground black pepper
05 - 1 stick (113g) unsalted butter, chilled and chopped up
06 - 2 tablespoons whole milk
07 - 1/2 cup plain yogurt, full-fat
08 - 1 1/2 cups all-purpose flour
09 - 1/3 cup scallions, finely chopped
10 - 1 tablespoon baking powder
11 - 1/2 teaspoon baking soda
12 - 1/4 teaspoon salt
13 - 1 large egg, beaten and at room temp

# Instructions:

01 - Turn on your oven and set it to 200°C. Place parchment paper on a large tray and leave it aside.
02 - Put the flour, brown sugar, salt, pepper, baking powder, and baking soda in a big bowl. Mix them up well.
03 - Take the cold, diced butter and rub it into the dry mix with your hands until you see a crumbly texture.
04 - In a small mixing bowl, stir together the milk, yogurt, and egg until it all looks smooth.
05 - Pour the wet mixture into the dry stuff and use a fork to toss it all together. Don’t overmix—just get it combined.
06 - Gently stir in the chopped ham, cheese, and scallions, making sure they’re spread throughout the dough.
07 - Put the dough on a floured surface and pat it into a circle about 8 inches wide. Slice this into 8 pizza-style wedges and move them to your tray.
08 - Let the scones bake for about 18 to 20 minutes or until the tops turn a light golden shade.
09 - Let them sit on the tray for 5 minutes to cool down, then serve them while still warm.
