# Ingredients:

→ Tuna Patty Mix

01 - 2 (142g per can) tins of drained, flaked white tuna
02 - 1 big egg
03 - Chopped green onion (use both green and white parts separately)
04 - 1 tablespoon soy sauce
05 - 1/4 cup of creamy mayo
06 - 2 tablespoons arrowroot starch
07 - 2 minced garlic cloves
08 - Salt & crushed black pepper (adjust as you like)
09 - Half a cup of panko or gluten-free crumbs
10 - Enough avocado oil to fry the cakes
11 - A drizzle of sesame oil for richness

→ Spicy Sauce

12 - Half a cup of high-quality mayo
13 - Juice squeezed fresh from a half lime
14 - Sriracha sauce to taste (about 1 tablespoon)
15 - A pinch or two of salt and pepper

→ Toppings

16 - Sesame seeds for sprinkling
17 - The tops of the green onions you set aside

# Instructions:

01 - Dice green onion, splitting the greens away from the whites for garnishing later. Put your crumb coating in a separate bowl so it’s ready to go.
02 - Combine the mayo, lime juice, sriracha, and some salt and pepper in a bowl. Stir until it’s silky smooth. Let it chill—it gets tastier with time.
03 - Mix together tuna, chopped white onion parts, egg, soy sauce, mayo, garlic, arrowroot, and seasoning in a bowl. Use a fork to combine everything until it sticks together.
04 - With wet hands, press the tuna mix into small 2-inch patties. Dip both sides into your crumbs so they’re fully coated. This step gives them a crispy finish when cooked!
05 - Heat avocado oil and a touch of sesame oil in a non-stick pan over medium heat. Cook patties for around 2 minutes on each side, flipping when golden-brown and crunchy.
06 - Move cooked patties onto a dish. Top them off with spicy mayo, sesame seeds, and those reserved green onion parts. They’re ready to eat!
