Put the ground chicken, spinach, cheese, bread crumbs, egg, garlic, onion powder, oregano, salt, and pepper into a big bowl. Stir gently until combined, but avoid over-mixing.

Split the mixture into 4 equal pieces. Shape each piece into a burger about 1/2-inch thick. Press a little dent into the center with your thumb to stop it from puffing during cooking.

Warm olive oil in a pan on medium heat. Fry the patties for about 5-6 minutes on each side until they're golden and hit an internal temperature of 165°F (74°C). During the last minute or two, put extra cheese on top and cover the pan to let it melt.

Toast the buns lightly if you’d like. Stack a cooked patty on each bottom bun, add lettuce, tomato, and any other fixings you want, then cap it off with the top bun. Enjoy right away!
