Mushrooms Spinach Mix (Print Version)

# Ingredients:

01 - 2 tbsp olive oil
02 - 1 pound mixed mushrooms, cut into pieces
03 - 4 cups tightly packed spinach leaves
04 - 4 garlic cloves, finely chopped
05 - 1 tbsp fresh squeezed lemon juice
06 - Salt and pepper for seasoning

# Instructions:

01 - Clean your mushrooms well and dry them with paper towels. Cut them the same size so they'll cook evenly. Rinse spinach and put it aside. Chop up the garlic and squeeze your lemon.
02 - Put olive oil in a big pan over medium flame. Toss in your sliced mushrooms and let them cook for 5-7 minutes, giving them a stir now and then until they get soft and dark brown.
03 - When your mushrooms look nearly done, toss in your chopped garlic. Keep stirring for about 1-2 minutes so the garlic doesn't burn.
04 - Drop the spinach into your pan and mix it gently with the mushrooms and garlic. Cook just until the leaves start shrinking down.
05 - Sprinkle with salt and pepper as you like. Pour in your fresh lemon juice and mix everything together to blend the flavors.

01 - Firm cremini mushrooms give you a rich, meaty taste, but you can use any mushrooms you have on hand for this dish.
