Spring Salad Delight (Print Version)

# Ingredients:

→ Fresh Green Mix

01 - 1 avocado, cut into cubes or slices
02 - 2 green onions, sliced thinly
03 - 4 radishes, thinly sliced after trimming
04 - 4 slices of cooked bacon, crumbled
05 - 1/4 cup sunflower seeds, roasted and salted
06 - 1/4 cup almonds, thinly sliced
07 - 5 ounces mixed spring greens
08 - 4 ounces sugar snap peas, trimmed and cut into 1/2-inch slices
09 - 1/2 cup petite peas, frozen and defrosted
10 - 4 ounces goat cheese, broken into chunks
11 - 1 pound asparagus, trimmed and chopped into 1-inch sections
12 - 1 head of butter lettuce, roughly torn apart

→ Zesty Basil Lemon Dressing

13 - 1/2 cup olive oil
14 - 1/3 cup packed basil leaves, coarsely chopped
15 - 3 tablespoons lemon juice, freshly squeezed
16 - 1 green onion, cut roughly
17 - 2 garlic cloves, peeled and chopped casually
18 - 1 teaspoon Dijon mustard
19 - 1/2 teaspoon sugar or honey
20 - 1/4 teaspoon dried oregano
21 - 1/4 teaspoon ground pepper
22 - 1/4 teaspoon salt

# Instructions:

01 - Throw all dressing ingredients into a strong blender and run it until smooth. Scrape down the sides when needed. You can chill it in the fridge or, if serving right away, pop it in the freezer for up to 30 minutes. Add extra honey, salt, pepper, or lemon juice if you'd like to tweak the flavor.
02 - Grab a big mixing bowl and toss together the butter lettuce and mixed spring greens. Give it a good mix.
03 - If you're serving everything at once, mix all the salad ingredients in a large bowl, drizzle the dressing on top, and toss. If leftover plans are in place, don't add bacon, avocado, or dressing right away. Let folks add those separately when serving.
04 - Set out every salad ingredient separately in its own bowl. Your guests can create their salads just how they like them.

# Notes:

01 - You can prep the dressing up to 5 days early and keep it sealed in the fridge. Veggies can be sliced and ready up to two days ahead, while cheese and bacon stay good for three days if stored in the fridge.
02 - To keep everything as fresh as possible, don't mix the salad ingredients together until you're ready to eat.
