02 - 1 ½ cups (126 g) crushed graham crackers
03 - ¼ cup (50 g) white sugar

→ Filling

04 - 2 large eggs, at room temperature
05 - 16 ounces soft cream cheese
06 - ⅓ cup (67 g) sugar
07 - ¼ teaspoon kosher salt
08 - 1 teaspoon vanilla
09 - 2 cups (332 g) chopped fresh strawberries

→ Crumble Topping

10 - 5 tablespoons butter, melted and unsalted
11 - ¼ teaspoon kosher salt
12 - ¾ cup (94 g) regular flour
13 - ¼ cup (50 g) packed brown sugar

# Instructions:

01 - Set the oven to 350°F. Line a 9x9-inch pan with parchment, making sure it hangs over the edges.
02 - Mix up the crushed graham crackers, melted butter, and white sugar in a bowl until it feels like damp sand. Press the mixture firmly into your lined pan.
03 - In a big bowl, whip together cream cheese, eggs, sugar, vanilla, and salt using a hand mixer until it's nice and smooth. Spread the mixture evenly over the crust.
04 - Sprinkle the diced strawberries evenly over the cream cheese layer.
05 - Combine flour, brown sugar, and salt in a bowl. Stir in the melted butter until clumps start to form. Spread the crumble over the strawberries.
06 - Pop it in the oven and bake for 35 to 40 mins, or until it sets fully.
07 - Put the pan on a rack and let it cool for an hour. After that, move it to the fridge for another hour to chill. Slice and serve cold.
