Mozzarella Spinach Meatballs (Print Version)

# Ingredients:

→ Base for Meatballs

01 - 1 cup spinach, finely minced
02 - 450g ground beef or a blend of beef and pork
03 - 3 garlic cloves, finely chopped
04 - 1/4 cup Parmesan cheese, shredded
05 - 1/4 cup plain breadcrumbs
06 - 1 egg, large
07 - 1/4 teaspoon pepper, black
08 - 1/2 teaspoon salt
09 - 1/2 teaspoon dried Italian herbs

→ Stuffing & Cooking

10 - 2 tablespoons oil, olive
11 - 1 cup mozzarella, diced into cubes

# Instructions:

01 - Get a big bowl and toss in the ground meat, spinach, garlic, breadcrumbs, Parmesan, egg, salt, pepper, and Italian herbs. Stir it all together, but be gentle so it doesn't get tough.
02 - Scoop a small amount (about 1-2 tablespoons) of meat mix into your hand. Flatten it, pop a mozzarella chunk in the middle, then fold the meat over and roll it into a ball. Repeat until you've used all the mix.
03 - Warm olive oil in a big pan on medium heat. Fry the meatballs in small groups so the pan isn't crowded. Cook each batch for 4-5 minutes per side until they're golden and done.
04 - Dish out the hot meatballs with marinara sauce on the side or serve them over pasta. Sprinkle some extra Parmesan and add fresh basil if you want.

01 - Don't overwork the meat mix—it keeps the meatballs soft and juicy.
02 - Make sure the cheese is fully sealed inside each ball so it doesn't ooze out while cooking.
