Cut croissants in half and quickly brown the cut sides in a dry pan or toaster until they're just crispy.

Put some eggs on each croissant bottom. Add a sausage patty, pour some sweet tangy spread on top, and sprinkle cheese if you're using it. Put the croissant top on to finish.
