Soft Banana Loaf (Print Version)

# Ingredients:

→ Powdery Mix

01 - 2 cups regular flour
02 - 1 teaspoon baking soda
03 - ½ teaspoon salt
04 - ½ teaspoon cinnamon

→ Liquid Mix

05 - ½ cup soft butter at room temp (swap with veggie oil if you want)
06 - ½ cup brown sugar
07 - ¼ cup white sugar
08 - 2 big eggs, not cold
09 - 1 teaspoon vanilla flavor
10 - 1 ⅓ cups squashed bananas (grab 4 small ones)

# Instructions:

01 - Warm up your oven to 350°F (180°C). Butter and dust with flour, or just cover with baking paper, an 8×4-inch bread tin.
02 - Crush bananas until they're smooth and gooey. You'll need about 1 ⅓ cups worth. Put them aside for now.
03 - Grab a small bowl and stir together your flour, baking soda, salt, and cinnamon. Leave it for later.
04 - In another bowl, beat your butter with both sugars using a mixer on medium for about 2 minutes until it looks pale and fluffy.
05 - Drop in eggs one after another, mixing after each. Stir in the vanilla and your mashed bananas until everything's mixed up nicely.
06 - Slowly add your dry bowl into your wet bowl. Stir just enough to mix it all. Don't go crazy with the mixing or it'll get tough.
07 - Dump your mix into the bread tin and stick it in the oven for 45-60 minutes. It's done when you can poke it with a toothpick and it comes out clean.
08 - Let your bread sit in the tin for 5 minutes. Then take it out and let it cool on a wire rack before you cut it.

# Notes:

01 - Super ripe bananas with dark spots make your bread super moist.
02 - Want more kick? Toss in ½ cup of chopped walnuts or chocolate bits.
