Easy Pineapple Chicken (Print Version)

# Ingredients:

01 - 1 lb chicken breasts, boneless and skinless, sliced into bite-sized cubes
02 - 1 tablespoon olive oil
03 - Pinch of salt and a few cracks of black pepper
04 - 2 garlic cloves, finely chopped
05 - 2 cups of bite-sized broccoli pieces
06 - 1 red pepper, deseeded and chopped into chunks
07 - 2 cups of fresh pineapple chunks
08 - Chopped green onions for topping (optional)
09 - Sesame seeds for topping (optional)

→ Sauce

10 - 1/4 cup of soy sauce (lower in sodium)
11 - 1/4 cup pineapple juice, freshly squeezed
12 - 1 teaspoon sesame oil
13 - 3 tablespoons of honey
14 - 2 teaspoons ginger, freshly grated

# Instructions:

01 - Heat olive oil in a big pan over medium heat. Toss in the chicken and season with some salt and pepper. Stir it around and cook until it begins to turn golden, which should take about 4 or 5 minutes. Add the chopped garlic and mix it in for around half a minute.
02 - Throw broccoli, red pepper, and pineapple into the pan next. Cook everything together for roughly 5 minutes until the veggies soften up and the chicken is fully cooked.
03 - In a little bowl, mix together the soy sauce, pineapple juice, sesame oil, honey, and grated ginger. Pour this sauce into your pan and let it bubble gently for a bit.
04 - Scatter some green onions and sesame seeds on top if you like. Serve warm and dig in!
