Tropical Chicken Skewers (Print Version)

# Ingredients:

01 - 1 teaspoon cornstarch
02 - 1 teaspoon grated ginger
03 - 1 red bell pepper, cut into thin strips
04 - 2 tablespoons soy sauce
05 - 4 chicken sausages
06 - 1 green bell pepper, sliced into strips
07 - 2 tablespoons honey
08 - 2 cloves garlic, finely chopped
09 - 2 tablespoons olive oil
10 - 1 cup chunks of fresh pineapple
11 - 1 small red onion, thinly sliced
12 - Fresh cilantro for topping (optional)
13 - Salt and pepper, as much as you'd like
14 - 1 tablespoon rice vinegar

# Instructions:

01 - Turn your grill or grill pan to medium-high and let it get hot.
02 - In a small bowl, combine soy sauce, honey, vinegar, ginger, and cornstarch to make a sweet glaze.
03 - Alternately thread pieces of chicken sausage, chunks of pineapple, and the sliced veggies (bell peppers and onion) onto skewers.
04 - Give your skewers a light coat of olive oil to stop sticking, then sprinkle with salt and pepper to taste.
05 - Place skewers on the hot grill. Let them cook for 10-12 minutes, flipping now and then. Make sure sausages are fully done and veggies have that nice charred look.
06 - As they cook, brush the marinade across the skewers to coat them evenly and add flavor.
07 - Take the skewers off the grill when ready, serve warm, and garnish with cilantro if you're feeling fancy.
