Mom's Zucchini Fritters (Print Version)

# Ingredients:

01 - 1/4 cup of grated Parmesan cheese
02 - A pinch of dried oregano
03 - 2 scoops, about 1 cup each, of shredded zucchini
04 - 2 heaping tablespoons of chopped green onion
05 - 2 beaten eggs, large
06 - 1/4 cup of cooking oil, or whatever amount works for you
07 - 1/2 cup of standard all-purpose flour
08 - 1/2 teaspoon of both baking powder and table salt

# Instructions:

01 - Take a bunch of paper towels and squeeze out the extra water from the grated zucchini. Toss the zucchini in a big bowl with the eggs and onion, and give it a stir until nicely combined.
02 - In another bowl, mix up the flour, Parmesan, baking powder, salt, and oregano. Pour this into the zucchini blend and mix just till it all comes together.
03 - Warm up some oil in a big frying pan over medium to hot heat. Scoop up a bit of the zucchini batter with a spoon, drop it into the skillet, and fry both sides until they turn a yummy golden shade—about 2-3 minutes each.
04 - Move the fried pancakes to a plate covered in paper towels to soak up extra oil. Grab one while it’s warm—and add sour cream if you want!
