Turn the oven on to 350°F (175°C). Rub a bit of coconut oil into 6 muffin pan spots to keep things from sticking.

In a big bowl, throw in the oats, maple syrup, peanut butter, vanilla, cinnamon, and salt. Stir until it's all mixed together well.

Split the blend between the 6 greased muffin spots. Use your fingers or the back of a spoon to push down and leave a little pocket in the middle.

Pop the pan in the oven and bake for about 12-15 minutes, until you notice the edges turning golden. Let them cool in the pan for 5 minutes. Then softly free each cup with a knife edge and let them cool off fully on a rack.

Scoop some yogurt into the cooled cups. Top them with fresh fruit, chia seeds, or any other goodies you love.
