# Ingredients:

01 - 4 cups chopped cucumbers
02 - 1 1/2 pounds strawberries, cut into quarters
03 - 1/2 cup minced fresh mint
04 - 1 small red onion, diced
05 - 8 ounces feta cheese, cut into cubes

→ Sauce

06 - 1/3 cup golden balsamic vinegar
07 - 1/3 cup olive oil
08 - 1/4 teaspoon ground pepper
09 - 2 tablespoons fresh lemon juice

# Instructions:

01 - Slice up your strawberries, dice the red onion, cube the feta, mince the mint leaves, and chop the cucumbers.
02 - Mix the olive oil, golden balsamic vinegar, a bit of lemon juice, and pepper in a small bowl. Stir until smooth.
03 - Toss cucumbers, strawberries, red onion, feta, and mint together in a big bowl. Add the dressing and gently stir to coat everything evenly.
04 - Pop the salad in the fridge for at least half an hour so the flavors meld together. Add extra mint on top before serving if you like.
